  • 1 (4 ounce) can diced green chiles, undrained
  • 2 cloves garlic, minced
  • 1 pound white American cheese, cut into 1 inch cubes
  • 1 (10 ounce) can Rotel diced tomatoes with green chiles, undrained
  • 1/2 cup milk
  • 1/2 cup heavy cream
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper (optional, for extra heat)
  • Salt and freshly ground black pepper to taste
  • Fresh cilantro, chopped, for garnish (optional)
  • Tortilla chips, for serving

Instructions

  1. Stovetop Method: Heat olive oil in a large saucepan or Dutch oven over medium heat. Add onion and cook until softened, about 5-7 minutes. Stir in green chiles and garlic; cook for another minute until fragrant.
  2. Add the cubed white American cheese, Rotel, milk, heavy cream, cumin, chili powder, and cayenne pepper (if using) to the saucepan. Stir constantly until the cheese is completely melted and the dip is smooth and creamy.
  3. Season with salt and pepper to taste.
  4. Crockpot Method: Combine all ingredients (except cilantro and tortilla chips) in a 6-quart or larger slow cooker.
  5. Cook on LOW for 2-3 hours, stirring occasionally, until the cheese is completely melted and the dip is smooth and hot.
  6. Once ready, switch the Crockpot to the ‘Warm’ setting to keep the dip hot for serving.
  7. Garnish with fresh cilantro, if desired, and serve immediately with tortilla chips.

Notes

  • For a spicier dip, increase the amount of cayenne pepper or add a pinch of red pepper flakes.
