- 3 pounds beef bones (such as oxtail or marrow bones)
- 1 pound beef chuck, for the meat
- 1 large onion, halved
- 4-inch piece of ginger, halved
- 2 star anise
- 1 cinnamon stick
- 5 whole cloves
- 1 teaspoon coriander seeds
- 1 teaspoon fennel seeds
- 2 tablespoons fish sauce
- 1 tablespoon sugar
- Salt to taste
- 1 pound dried pho noodles
- 1 cup thinly sliced raw beef (sirloin or flank steak)
- Fresh cilantro, chopped, for garnish
- Fresh mint leaves, for garnish
- Sliced green onions, for garnish
- Bean sprouts, for garnish
- Lime wedges, for serving
- Sriracha sauce, for serving
- Hoisin sauce, for serving
Instructions
- Rinse the beef bones and place them in a large stockpot. Cover with cold water and bring to a boil. Boil for 5 minutes, then drain and rinse the bones. This helps to remove impurities.
- In the same stockpot, add the beef bones, beef chuck, onion, ginger, star anise, cinnamon stick, cloves, coriander seeds, and fennel seeds. Cover with 12 cups of water. Bring to a boil, then reduce heat and simmer for at least 3 hours, or up to 5 hours, skimming off any foam or scum that rises to the surface.
- After simmering, remove the beef chuck and set aside to cool. Strain the broth through a fine-mesh sieve, discarding the solids.
- Shred the beef chuck. Season the broth with fish sauce, sugar, and salt to taste.
- Cook the pho noodles according to package directions.
- To assemble the pho, place some noodles in a bowl. Top with slices of the cooked beef chuck and thinly sliced raw beef.
- Ladle hot broth over the noodles and beef. Garnish with cilantro, mint, green onions, and bean sprouts.
- Serve immediately with lime wedges, sriracha, and hoisin sauce on the side for each person to customize to their taste.
Notes
- For a richer broth, you can char the onion and ginger before adding them to the pot.
- Adjust the amount of fish sauce and sugar to your liking.
- The raw beef will cook in the hot broth.
- Feel free to add other toppings like Thai basil or thinly sliced chilies.
