- 1 pound Italian sausage, removed from casings (or ground Italian sausage)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 4 cups chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 8 ounces pasta (penne, rotini, or your favorite shape)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Fresh basil leaves, chopped (for garnish)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
- Add the chopped onion to the pot and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more, until fragrant.
- Pour in the crushed tomatoes and chicken broth. Stir in the oregano, basil, salt, and pepper. Bring to a simmer.
- Add the pasta to the pot and stir to submerge. Cook, stirring occasionally, until the pasta is cooked through, about 10-12 minutes, or according to package directions.
- Stir in the heavy cream and Parmesan cheese. Cook for 1-2 minutes, until the sauce is creamy and heated through.
- Taste and adjust seasonings as needed.
- Garnish with fresh basil leaves before serving.
Notes
- For a vegetarian version, omit the sausage and add a can of drained and rinsed cannellini beans or white beans.
- You can substitute vegetable broth for chicken broth.
- Feel free to add other vegetables, such as bell peppers or mushrooms, along with the onion.
- Adjust the amount of salt and pepper to your preference.
