  • 1 tablespoon olive oil
  • 1 pound Italian sausage, removed from casings (or ground Italian sausage)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 8 ounces pasta (penne, rotini, or your favorite shape)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more, until fragrant.
  3. Pour in the crushed tomatoes and chicken broth. Stir in the oregano, basil, salt, and pepper. Bring to a simmer.
  4. Add the pasta to the pot and stir to submerge. Cook, stirring occasionally, until the pasta is cooked through, about 10-12 minutes, or according to package directions.
  5. Stir in the heavy cream and Parmesan cheese. Cook for 1-2 minutes, until the sauce is creamy and heated through.
  6. Taste and adjust seasonings as needed.
  7. Garnish with fresh basil leaves before serving.

Notes

  • For a vegetarian version, omit the sausage and add a can of drained and rinsed cannellini beans or white beans.
  • You can substitute vegetable broth for chicken broth.
  • Feel free to add other vegetables, such as bell peppers or mushrooms, along with the onion.
