Ingredients
Scale
- 1 pound pasta (penne, rotini, or your favorite shape)
- 4 cups vegetable broth (or chicken broth)
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 2 cups shredded cheddar cheese (or a mix of your favorite cheeses)
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- In a large oven-safe skillet (or a large pot if you don’t have an oven-safe skillet), combine the pasta, vegetable broth, minced garlic, olive oil, salt, pepper, and red pepper flakes (if using).
- Bring the mixture to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover the skillet, and simmer for about 12-15 minutes, or until the pasta is cooked through and the liquid is mostly absorbed, stirring occasionally to prevent sticking.
- Remove the skillet from the heat.
- Stir in the cheddar cheese and Parmesan cheese until melted and well combined.
- Garnish with fresh parsley.
- Serve immediately and enjoy!
Notes
- For extra flavor, you can add a tablespoon of butter at the end.
- Feel free to add cooked chicken, sausage, or vegetables like broccoli or spinach to make it a more complete meal. Add these in the last few minutes of cooking.
- If you prefer a creamier pasta, stir in a splash of heavy cream or milk at the end.
- Adjust the amount of red pepper flakes to your spice preference.
