- 1 pound ground beef
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (15 ounce) can corn, drained
- 1 (15 ounce) can green beans, drained
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 1 cup cooked elbow macaroni
- 1 cup shredded cheddar cheese
- 1 cup milk
- 1/2 cup sour cream
Instructions
- Preheat oven to 375°F (190°C).
- Brown ground beef in a large skillet over medium heat. Drain off any excess grease.
- Add onion and bell pepper to the skillet and cook until softened, about 5 minutes. Stir in garlic, diced tomatoes, corn, and green beans. Season with oregano, basil, salt, and pepper. Simmer for 10 minutes, stirring occasionally.
- Stir in cooked macaroni.
- In a separate bowl, whisk together milk and sour cream.
- Pour the meat and vegetable mixture into a 9×13 inch baking dish. Pour milk and sour cream mixture over the casserole and top with shredded cheddar cheese.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly and the casserole is heated through. Let stand for a few minutes before serving.
Notes
- Feel free to add other vegetables, such as mushrooms or carrots.
- For a spicier casserole, add a pinch of red pepper flakes.
- You can substitute ground turkey or chicken for the ground beef.
