Description

This Old Fashioned Family Dinner Casserole is a comforting and classic dish, perfect for a hearty weeknight meal. It’s filled with tender ground beef, vegetables, and a creamy sauce, all baked to golden perfection. This recipe is a guaranteed crowd-pleaser and a great way to use up leftover ingredients.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can corn, drained
  • 1 (15 ounce) can green beans, drained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1 cup cooked elbow macaroni
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 1/2 cup sour cream

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown ground beef in a large skillet over medium heat. Drain off any excess grease.
  3. Add onion and bell pepper to the skillet and cook until softened, about 5 minutes. Stir in garlic, diced tomatoes, corn, and green beans. Season with oregano, basil, salt, and pepper. Simmer for 10 minutes, stirring occasionally.
  4. Stir in cooked macaroni.
  5. In a separate bowl, whisk together milk and sour cream.
  6. Pour the meat and vegetable mixture into a 9×13 inch baking dish. Pour milk and sour cream mixture over the casserole and top with shredded cheddar cheese.
  7. Bake for 20-25 minutes, or until the cheese is melted and bubbly and the casserole is heated through. Let stand for a few minutes before serving.

Notes

  • Feel free to add other vegetables, such as mushrooms or carrots.
  • For a spicier casserole, add a pinch of red pepper flakes.
  • You can substitute ground turkey or chicken for the ground beef.
