- 2 cans (15 ounces each) chickpeas, drained and rinsed
- 1/4 cup tahini
- 1/4 cup fresh lemon juice
- 2 cloves garlic, minced
- 2 tablespoons olive oil, plus more for drizzling
- 1/4 cup cold water, or more as needed
- 1 teaspoon ground cumin
- Salt to taste
- For Toppings:
- 1/2 cup chopped Kalamata olives
- 1/4 cup chopped roasted red peppers
- 1/4 cup crumbled feta cheese
- 2 tablespoons chopped fresh parsley
- 1 tablespoon za’atar
- Pinch of red pepper flakes (optional)
- For Serving:
- Pita bread, crackers, or fresh vegetables
Instructions
- In a food processor, combine the drained chickpeas, tahini, lemon juice, minced garlic, 2 tablespoons of olive oil, cumin, and salt.
- Process until the mixture is mostly smooth.
- With the food processor running, slowly drizzle in the cold water, 1 tablespoon at a time, until the hummus reaches your desired creamy consistency. You may need a little more or less water depending on your tahini and desired texture.
- Taste and adjust seasoning if necessary.
- Spoon the hummus into a shallow serving bowl or platter.
- Create a well in the center of the hummus. Drizzle generously with olive oil.
- Artfully arrange the toppings over the hummus: sprinkle with Kalamata olives, roasted red peppers, crumbled feta, fresh parsley, za’atar, and red pepper flakes (if using).
- Serve immediately with pita bread, crackers, or an assortment of fresh vegetables for dipping.
Notes
- For an extra smooth hummus, you can peel the chickpeas before processing, though this is optional.
