Ingredients

  • 2 cans (15 ounces each) chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil, plus more for drizzling
  • 1/4 cup cold water, or more as needed
  • 1 teaspoon ground cumin
  • Salt to taste
  • For Toppings:
    • 1/2 cup chopped Kalamata olives
    • 1/4 cup chopped roasted red peppers
    • 1/4 cup crumbled feta cheese
    • 2 tablespoons chopped fresh parsley
    • 1 tablespoon za’atar
    • Pinch of red pepper flakes (optional)
  • For Serving:
    • Pita bread, crackers, or fresh vegetables

Instructions

  1. In a food processor, combine the drained chickpeas, tahini, lemon juice, minced garlic, 2 tablespoons of olive oil, cumin, and salt.
  2. Process until the mixture is mostly smooth.
  3. With the food processor running, slowly drizzle in the cold water, 1 tablespoon at a time, until the hummus reaches your desired creamy consistency. You may need a little more or less water depending on your tahini and desired texture.
  4. Taste and adjust seasoning if necessary.
  5. Spoon the hummus into a shallow serving bowl or platter.
  6. Create a well in the center of the hummus. Drizzle generously with olive oil.
  7. Artfully arrange the toppings over the hummus: sprinkle with Kalamata olives, roasted red peppers, crumbled feta, fresh parsley, za’atar, and red pepper flakes (if using).
  8. Serve immediately with pita bread, crackers, or an assortment of fresh vegetables for dipping.

Notes

  • For an extra smooth hummus, you can peel the chickpeas before processing, though this is optional.
  • Feel free to customize the toppings with other Mediterranean-inspired ingredients like sun-dried tomatoes, artichoke hearts, or a sprinkle of sumac.
