This Maple Glazed Chicken with Sweet Potatoes is a delicious and easy one-pan meal, perfect for a weeknight dinner. The chicken and sweet potatoes are roasted to perfection with a sweet and savory maple glaze.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 large sweet potatoes, peeled and cut into 1-inch cubes
  • 1 red onion, cut into wedges
  • 2 tablespoons olive oil
  • 1/4 cup maple syrup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss the sweet potatoes and red onion with 1 tablespoon of olive oil, salt, and pepper. Spread them in a single layer on a large baking sheet.
  3. In a separate bowl, whisk together the maple syrup, apple cider vinegar, Dijon mustard, smoked paprika, and remaining 1 tablespoon of olive oil.
  4. Season the chicken breasts with salt and pepper.
  5. Place the chicken breasts on the baking sheet alongside the sweet potatoes and red onion.
  6. Brush the maple glaze generously over the chicken breasts.
  7. Roast for 25-30 minutes, or until the chicken is cooked through and the sweet potatoes are tender. Baste the chicken with the glaze a couple of times during the cooking process.
  8. Garnish with fresh parsley and serve immediately.
