- 4 boneless, skinless chicken breasts
- 2 large sweet potatoes, peeled and cut into 1-inch cubes
- 1 red onion, cut into wedges
- 2 tablespoons olive oil
- 1/4 cup maple syrup
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss the sweet potatoes and red onion with 1 tablespoon of olive oil, salt, and pepper. Spread them in a single layer on a large baking sheet.
- In a separate bowl, whisk together the maple syrup, apple cider vinegar, Dijon mustard, smoked paprika, and remaining 1 tablespoon of olive oil.
- Season the chicken breasts with salt and pepper.
- Place the chicken breasts on the baking sheet alongside the sweet potatoes and red onion.
- Brush the maple glaze generously over the chicken breasts.
- Roast for 25-30 minutes, or until the chicken is cooked through and the sweet potatoes are tender. Baste the chicken with the glaze a couple of times during the cooking process.
- Garnish with fresh parsley and serve immediately.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the glaze.
- You can substitute honey for maple syrup.
