Description

These Lemon Garlic Chicken Thighs are incredibly flavorful, easy to make, and perfect for a weeknight dinner. The chicken is tender and juicy, infused with the bright flavors of lemon and garlic.

  • 68 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 cup lemon juice (from about 12 lemons)
  • 1 teaspoon lemon zest
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, whisk together the olive oil, minced garlic, lemon juice, lemon zest, oregano, salt, and pepper.
  3. Place the chicken thighs in a baking dish.
  4. Pour the lemon garlic mixture over the chicken thighs, making sure to coat them evenly.
  5. Bake for 35-45 minutes, or until the chicken is cooked through and the skin is golden brown and crispy. The internal temperature should reach 165°F (74°C).
  6. Garnish with fresh parsley before serving.
