- 6–8 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 cup lemon juice (from about 1–2 lemons)
- 1 teaspoon lemon zest
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- In a small bowl, whisk together the olive oil, minced garlic, lemon juice, lemon zest, oregano, salt, and pepper.
- Place the chicken thighs in a baking dish.
- Pour the lemon garlic mixture over the chicken thighs, making sure to coat them evenly.
- Bake for 35-45 minutes, or until the chicken is cooked through and the skin is golden brown and crispy. The internal temperature should reach 165°F (74°C).
- Garnish with fresh parsley before serving.
Notes
- For extra crispy skin, you can broil the chicken for the last 2-3 minutes of cooking time, but watch closely to prevent burning.
- Serve with your favorite sides like roasted vegetables, rice, or mashed potatoes.
