Description

These Honey Chipotle Chicken Thighs are a delicious balance of sweet and spicy, perfect for a weeknight meal or a weekend gathering. The chicken is tender, juicy, and packed with flavor.


Ingredients

  • 68 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 1/4 cup honey
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon chipotle peppers in adobo sauce, finely chopped (about 23 peppers)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and freshly ground black pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together the honey, apple cider vinegar, chopped chipotle peppers, smoked paprika, garlic powder, onion powder, salt, and pepper.
  3. Pat the chicken thighs dry with paper towels. This helps the skin crisp up.
  4. Place the chicken thighs in a large bowl and pour the honey chipotle mixture over them. Toss to coat evenly.
  5. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  6. Place the chicken thighs skin-side down in the hot skillet. Sear for 3-4 minutes, until the skin starts to brown.
  7. Transfer the skillet to the preheated oven.
  8. Bake for 25-35 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C). The skin should be crispy and golden brown.
  9. Garnish with fresh cilantro and serve immediately.

Notes

  • For extra spice, add a pinch of cayenne pepper to the marinade.
  • If you don’t have an oven-safe skillet, you can sear the chicken in a regular skillet and then transfer the chicken to a baking dish.
  • Serve with rice, roasted vegetables, or a fresh salad.
