- 6–8 bone-in, skin-on chicken thighs
- 1 tablespoon olive oil
- 1/4 cup honey
- 2 tablespoons apple cider vinegar
- 1 tablespoon chipotle peppers in adobo sauce, finely chopped (about 2–3 peppers)
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and freshly ground black pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, whisk together the honey, apple cider vinegar, chopped chipotle peppers, smoked paprika, garlic powder, onion powder, salt, and pepper.
- Pat the chicken thighs dry with paper towels. This helps the skin crisp up.
- Place the chicken thighs in a large bowl and pour the honey chipotle mixture over them. Toss to coat evenly.
- Heat the olive oil in a large oven-safe skillet over medium-high heat.
- Place the chicken thighs skin-side down in the hot skillet. Sear for 3-4 minutes, until the skin starts to brown.
- Transfer the skillet to the preheated oven.
- Bake for 25-35 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C). The skin should be crispy and golden brown.
- Garnish with fresh cilantro and serve immediately.
Notes
- For extra spice, add a pinch of cayenne pepper to the marinade.
- If you don’t have an oven-safe skillet, you can sear the chicken in a regular skillet and then transfer the chicken to a baking dish.
- Serve with rice, roasted vegetables, or a fresh salad.
