  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can tomato sauce
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 cup beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup uncooked egg noodles
  • Grated cheddar cheese, for topping (optional)

Instructions

  1. In a large skillet or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion to the skillet and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more.
  3. Stir in the tomato sauce, diced tomatoes, beef broth, oregano, basil, salt, and pepper. Bring to a simmer.
  4. Add the frozen mixed vegetables and egg noodles to the skillet. Stir to combine.
  5. Cover the skillet and reduce heat to low. Simmer for 15-20 minutes, or until the noodles are cooked through and the sauce has thickened. Stir occasionally to prevent sticking.
  6. If desired, top with grated cheddar cheese during the last few minutes of cooking, allowing it to melt.
  7. Serve hot.
