  • 1 1/2 lbs ground beef (80/20 or 85/15 recommended)
  • 1 large egg
  • 1/2 cup breadcrumbs (plain or seasoned)
  • 1/4 cup finely chopped onion (for patties)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil or vegetable oil
  • 1 large yellow onion, sliced
  • 8 oz cremini mushrooms, sliced
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 (10.5 oz) can cream of chicken soup
  • 1 1/2 cups beef broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper (for gravy)
  • 2 lbs Yukon Gold potatoes, peeled and quartered
  • 1 lb fresh or frozen green beans, trimmed

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a large baking dish (9×13 inch or similar).
  2. In a large bowl, combine the ground beef, egg, breadcrumbs, 1/4 cup finely chopped onion, Worcestershire sauce, garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix gently until just combined (do not overmix).
  3. Form the mixture into 6-8 oval-shaped patties, about 3/4 inch thick.
  4. Heat the olive oil in a large skillet over medium-high heat. Sear the hamburger steaks for 2-3 minutes per side until nicely browned. They don’t need to be cooked through at this point. Remove the patties from the skillet and set aside.
  5. In the same skillet, add the sliced large onion and mushrooms. Sauté for 5-7 minutes until softened and lightly browned.
  6. In a separate bowl, whisk together the cream of mushroom soup, cream of chicken soup, beef broth, dried thyme, and 1/2 teaspoon black pepper until smooth.
  7. Arrange the quartered potatoes and green beans in the prepared baking dish. Place the seared hamburger steaks on top of the vegetables.
  8. Pour the mushroom and onion mixture over the steaks and vegetables, then pour the soup mixture evenly over everything.
  9. Cover the baking dish tightly with aluminum foil.
  10. Bake for 45 minutes. Remove the foil and continue baking for another 15-20 minutes, or until the potatoes are tender and the hamburger steaks are cooked through.
  11. Let the bake rest for 5-10 minutes before serving.

Notes

  • For extra flavor, you can add a splash of red wine or a dash of browning sauce to the gravy mixture.
  • If you prefer, you can use frozen chopped onions and mushrooms to save on prep time.
