Ingredients
Scale
- 6–8 bone-in, skin-on chicken thighs
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, whisk together the olive oil, minced garlic, Parmesan cheese, oregano, basil, salt, and pepper.
- Place the chicken thighs in a single layer in a baking dish.
- Brush the garlic parmesan mixture evenly over the tops of the chicken thighs, making sure to get some under the skin if possible.
- Bake for 35-45 minutes, or until the chicken is cooked through and the skin is golden brown and crispy. The internal temperature should reach 165°F (74°C).
- Let the chicken rest for a few minutes before serving.
Notes
- For extra crispy skin, broil the chicken for the last 2-3 minutes of cooking, watching closely to prevent burning.
- Serve with your favorite sides, such as roasted vegetables, mashed potatoes, or a fresh salad.
- You can also use chicken breasts, but adjust the cooking time as needed.
