Description

These Garlic Parmesan Chicken Thighs are incredibly flavorful, easy to make, and perfect for a weeknight dinner. Crispy on the outside and juicy on the inside, they’re a guaranteed crowd-pleaser!


Ingredients

  • 68 bone-in, skin-on chicken thighs
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together the olive oil, minced garlic, Parmesan cheese, oregano, basil, salt, and pepper.
  3. Place the chicken thighs in a single layer in a baking dish.
  4. Brush the garlic parmesan mixture evenly over the tops of the chicken thighs, making sure to get some under the skin if possible.
  5. Bake for 35-45 minutes, or until the chicken is cooked through and the skin is golden brown and crispy. The internal temperature should reach 165°F (74°C).
  6. Let the chicken rest for a few minutes before serving.

Notes

  • For extra crispy skin, broil the chicken for the last 2-3 minutes of cooking, watching closely to prevent burning.
  • Serve with your favorite sides, such as roasted vegetables, mashed potatoes, or a fresh salad.
  • You can also use chicken breasts, but adjust the cooking time as needed.
