- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese, plus extra for topping
- 2 large eggs, lightly beaten
- 1/4 cup milk
- 4 cloves garlic, minced
- 1 tablespoon dried Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped fresh parsley
- 1/4 cup olive oil
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a loaf pan.
- In a large bowl, combine ground chicken, panko breadcrumbs, Parmesan cheese, eggs, milk, minced garlic, Italian seasoning, salt, pepper, and parsley.
- Gently mix with your hands until just combined. Do not overmix.
- Transfer the mixture to the prepared loaf pan and shape it evenly.
- Drizzle the top with olive oil and sprinkle with extra Parmesan cheese.
- Bake for 50-60 minutes, or until the internal temperature reaches 165°F (74°C) and the top is golden brown.
- Let the meatloaf rest for 10 minutes before slicing and serving.
Notes
- For a spicier meatloaf, add a pinch of red pepper flakes.
