Ingredients

  • 1 pound sirloin steak, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 4 tablespoons butter, divided
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and freshly ground black pepper to taste
  • 8 ounces pasta (such as fettuccine or penne)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Pasta: Cook pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
  2. Sear the Steak: Season steak bites with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear steak bites in batches until browned on all sides, about 2-3 minutes per batch. Remove steak from skillet and set aside.
  3. Make the Garlic Butter Sauce: In the same skillet, melt 2 tablespoons of butter. Add minced garlic and cook for about 30 seconds, until fragrant.
  4. Add Cream and Cheese: Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and the sauce slightly thickens, about 2 minutes.
  5. Combine: Add the cooked steak bites back to the skillet with the sauce. Toss to coat.
  6. Assemble: Add cooked pasta to the skillet and toss to combine with the sauce and steak. Add pasta water if needed to adjust consistency.
  7. Finish: Stir in the remaining 2 tablespoons of butter and season with salt and pepper to taste.
  8. Serve: Garnish with fresh parsley and serve immediately.

Notes

  • For extra flavor, use compound garlic butter.
  • Adjust the amount of garlic to your preference.
  • If you don’t have heavy cream, you can use half-and-half, but the sauce might be thinner.
