- 1 pound sirloin steak, cut into 1-inch cubes
- 1 tablespoon olive oil
- 4 tablespoons butter, divided
- 4 cloves garlic, minced
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Salt and freshly ground black pepper to taste
- 8 ounces pasta (such as fettuccine or penne)
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the Pasta: Cook pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
- Sear the Steak: Season steak bites with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear steak bites in batches until browned on all sides, about 2-3 minutes per batch. Remove steak from skillet and set aside.
- Make the Garlic Butter Sauce: In the same skillet, melt 2 tablespoons of butter. Add minced garlic and cook for about 30 seconds, until fragrant.
- Add Cream and Cheese: Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and the sauce slightly thickens, about 2 minutes.
- Combine: Add the cooked steak bites back to the skillet with the sauce. Toss to coat.
- Assemble: Add cooked pasta to the skillet and toss to combine with the sauce and steak. Add pasta water if needed to adjust consistency.
- Finish: Stir in the remaining 2 tablespoons of butter and season with salt and pepper to taste.
- Serve: Garnish with fresh parsley and serve immediately.

- For extra flavor, use compound garlic butter.
- Adjust the amount of garlic to your preference.
- If you don’t have heavy cream, you can use half-and-half, but the sauce might be thinner.
