- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 4 tablespoons unsalted butter, divided
- 4 cloves garlic, minced
- 1 cup orzo pasta
- 2 cups chicken broth
- 1/4 cup dry white wine (optional)
- Salt and black pepper to taste
- 1/4 cup chopped fresh parsley
- Lemon wedges, for serving
Instructions
- Season the shrimp with salt and pepper.
- Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove the shrimp from the skillet and set aside.
- Add the remaining 2 tablespoons of butter to the skillet. Once melted, add the minced garlic and cook for about 30 seconds, until fragrant.
- Add the orzo pasta to the skillet and toast for 1-2 minutes, stirring frequently.
- Pour in the chicken broth and white wine (if using). Bring to a simmer.
- Reduce heat to medium-low, cover, and cook for 12-15 minutes, or until the orzo is tender and the liquid is absorbed. Stir occasionally to prevent sticking.
- Return the shrimp to the skillet. Stir to combine.
- Stir in the parsley. Season with additional salt and pepper to taste.
- Serve immediately, garnished with lemon wedges.
Notes
- For extra flavor, you can add a pinch of red pepper flakes.
- Feel free to use pre-cooked shrimp to save time. Add them during the last few minutes of cooking.
- If you don’t have white wine, you can substitute with extra chicken broth.
- Adjust the cooking time based on your stove and the type of orzo.
