- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon grated fresh ginger
- 2 cloves garlic, minced
- 1/2 cup chopped onion
- 1/2 cup chopped carrots
- 1/2 cup chopped celery
- 4 cups chicken broth
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce (optional)
- 1 tablespoon sesame oil
- 1 teaspoon sugar
- 8 ounces dried egg noodles
- 2 green onions, sliced, for garnish
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the chicken and cook until browned, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- Add the ginger, garlic, onion, carrots, and celery to the skillet. Cook, stirring, until the vegetables soften, about 5 minutes.
- Pour in the chicken broth, soy sauce, oyster sauce (if using), sesame oil, and sugar. Bring to a boil.
- Add the egg noodles and cook according to package directions, until tender.
- Return the chicken to the skillet and heat through.
- Serve hot, garnished with sliced green onions.
