  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1/2 cup chopped onion
  • 1/2 cup chopped carrots
  • 1/2 cup chopped celery
  • 4 cups chicken broth
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce (optional)
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 8 ounces dried egg noodles
  • 2 green onions, sliced, for garnish

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the chicken and cook until browned, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Add the ginger, garlic, onion, carrots, and celery to the skillet. Cook, stirring, until the vegetables soften, about 5 minutes.
  4. Pour in the chicken broth, soy sauce, oyster sauce (if using), sesame oil, and sugar. Bring to a boil.
  5. Add the egg noodles and cook according to package directions, until tender.
  6. Return the chicken to the skillet and heat through.
