- 1 tablespoon olive oil
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 4 cups beef broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 9 lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh basil leaves, for garnish (optional)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
- Add onion and cook until softened, about 5 minutes. Stir in garlic and cook for 1 minute more.
- Pour in crushed tomatoes and beef broth. Season with oregano, basil, salt, and pepper. Bring to a boil.
- Add broken lasagna noodles and cook according to package directions, or until noodles are tender.
- Stir in ricotta cheese, mozzarella cheese, and Parmesan cheese. Cook until the cheeses are melted and heated through.
- Serve hot, garnished with fresh basil leaves, if desired.
Notes
- For a spicier soup, add a pinch of red pepper flakes.
- You can substitute ground turkey or Italian sausage for the ground beef.
- Feel free to add other vegetables like zucchini or mushrooms.
