Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 4 cups beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 9 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves, for garnish (optional)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  2. Add onion and cook until softened, about 5 minutes. Stir in garlic and cook for 1 minute more.
  3. Pour in crushed tomatoes and beef broth. Season with oregano, basil, salt, and pepper. Bring to a boil.
  4. Add broken lasagna noodles and cook according to package directions, or until noodles are tender.
  5. Stir in ricotta cheese, mozzarella cheese, and Parmesan cheese. Cook until the cheeses are melted and heated through.
  6. Serve hot, garnished with fresh basil leaves, if desired.

Notes

  • For a spicier soup, add a pinch of red pepper flakes.
  • You can substitute ground turkey or Italian sausage for the ground beef.
