Description

These Double Chocolate Peppermint Cookies are the perfect festive treat. Rich, chewy, and loaded with chocolate flavor, they’re elevated with a refreshing peppermint crunch. Ideal for holiday baking or any time you crave a decadent and minty dessert.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 ¾ cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups semi-sweet chocolate chips
  • ½ cup crushed peppermint candies (plus extra for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Fold in the semi-sweet chocolate chips and ½ cup of crushed peppermint candies.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are set and the centers are still slightly soft.
  9. Remove from oven and immediately sprinkle with additional crushed peppermint candies, if desired.
  10. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For extra peppermint flavor, you can add ½ teaspoon of peppermint extract to the wet ingredients along with the vanilla.
  • Store cookies in an airtight container at room temperature for up to 5 days.
  • These cookies also freeze well for up to 3 months. Thaw at room temperature before serving.
