Description

This Crock Pot French Dip Sandwich recipe is perfect for a cozy weeknight meal or a casual gathering. Tender, flavorful roast beef simmers in a rich au jus, ready to be piled high on toasted hoagie rolls. It’s an easy, hands-off way to enjoy a classic comfort food.


Ingredients

  • 34 pound beef chuck roast
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup water
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon black pepper
  • Salt to taste
  • Hoagie rolls or French bread, sliced
  • Provolone cheese slices (optional)

Instructions

  1. Season the chuck roast generously with salt and pepper.
  2. Place the sliced onion in the bottom of the slow cooker.
  3. Place the chuck roast on top of the onions.
  4. In a bowl, whisk together the beef broth, water, Worcestershire sauce, thyme, rosemary, and minced garlic.
  5. Pour the broth mixture over the roast and onions.
  6. Cover the slow cooker and cook on low for 7-8 hours, or on high for 3-4 hours, or until the beef is very tender and easily shreds with a fork.
  7. Once the roast is cooked, remove it from the slow cooker and shred it with two forks.
  8. Strain the au jus from the slow cooker into a bowl, discarding the onions (or setting them aside to serve).
  9. If desired, toast the hoagie rolls or French bread.
  10. To assemble the sandwiches, pile shredded beef onto the toasted rolls. Top with provolone cheese, if desired.
  11. Serve the French Dip sandwiches with a bowl of the warm au jus for dipping.

Notes

  • For a richer au jus, you can skim off some of the fat from the top after straining.
  • Feel free to add other vegetables to the slow cooker, such as carrots or bell peppers.
  • If you want to make this ahead, shred the beef and store it separately from the au jus. Reheat the beef and au jus before serving.
  • Consider adding a bay leaf to the slow cooker while cooking for extra flavor. Remove before shredding.
