This Crock Pot French Dip Sandwich recipe is perfect for a cozy weeknight meal or a casual gathering. Tender, flavorful roast beef simmers in a rich au jus, ready to be piled high on toasted hoagie rolls. It’s an easy, hands-off way to enjoy a classic comfort food.

- 3–4 pound beef chuck roast
- 1 large onion, sliced
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 cup water
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon black pepper
- Salt to taste
- Hoagie rolls or French bread, sliced
- Provolone cheese slices (optional)
Instructions
- Season the chuck roast generously with salt and pepper.
- Place the sliced onion in the bottom of the slow cooker.
- Place the chuck roast on top of the onions.
- In a bowl, whisk together the beef broth, water, Worcestershire sauce, thyme, rosemary, and minced garlic.
- Pour the broth mixture over the roast and onions.
- Cover the slow cooker and cook on low for 7-8 hours, or on high for 3-4 hours, or until the beef is very tender and easily shreds with a fork.
- Once the roast is cooked, remove it from the slow cooker and shred it with two forks.
- Strain the au jus from the slow cooker into a bowl, discarding the onions (or setting them aside to serve).
- If desired, toast the hoagie rolls or French bread.
- To assemble the sandwiches, pile shredded beef onto the toasted rolls. Top with provolone cheese, if desired.
- Serve the French Dip sandwiches with a bowl of the warm au jus for dipping.
Notes
- For a richer au jus, you can skim off some of the fat from the top after straining.
- Feel free to add other vegetables to the slow cooker, such as carrots or bell peppers.
- If you want to make this ahead, shred the beef and store it separately from the au jus. Reheat the beef and au jus before serving.
- Consider adding a bay leaf to the slow cooker while cooking for extra flavor. Remove before shredding.
