Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 pound pasta (penne, farfalle, or your favorite shape)
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup all-purpose flour
  • 4 cups milk
  • 1 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta according to package directions. Drain and set aside.
  2. Season the chicken with salt and pepper. Heat the olive oil in a large skillet or pan over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the onion and cook until softened, about 3-5 minutes. Add the garlic and cook for 1 minute more.
  4. Sprinkle the flour over the onion and garlic mixture and cook for 1 minute, stirring constantly.
  5. Gradually whisk in the milk, ensuring there are no lumps. Bring the sauce to a simmer, stirring constantly, until it thickens, about 3-5 minutes.
  6. Stir in the Parmesan cheese, salt, pepper, and nutmeg (if using).
  7. Add the cooked chicken and pasta to the sauce and toss to combine.
  8. Garnish with fresh parsley and serve immediately.

Notes

  • For a spicier dish, add a pinch of red pepper flakes to the sauce.
  • You can also add other vegetables, such as mushrooms or broccoli, to the sauce.
  • Leftovers can be stored in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
