- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 pound pasta (penne, farfalle, or your favorite shape)
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/2 cup all-purpose flour
- 4 cups milk
- 1 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta according to package directions. Drain and set aside.
- Season the chicken with salt and pepper. Heat the olive oil in a large skillet or pan over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the onion and cook until softened, about 3-5 minutes. Add the garlic and cook for 1 minute more.
- Sprinkle the flour over the onion and garlic mixture and cook for 1 minute, stirring constantly.
- Gradually whisk in the milk, ensuring there are no lumps. Bring the sauce to a simmer, stirring constantly, until it thickens, about 3-5 minutes.
- Stir in the Parmesan cheese, salt, pepper, and nutmeg (if using).
- Add the cooked chicken and pasta to the sauce and toss to combine.
- Garnish with fresh parsley and serve immediately.
Notes
- For a spicier dish, add a pinch of red pepper flakes to the sauce.
- You can also add other vegetables, such as mushrooms or broccoli, to the sauce.
- Leftovers can be stored in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
