Description

This hearty Creamy Tortellini Sausage Soup combines cheese tortellini, Italian sausage, and fresh vegetables in a rich, creamy broth. Perfect for cold weather comfort food!


Ingredients

  • 1 pound Italian sausage, casings removed
  • 1 large onion, diced
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 6 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 package (20 oz) cheese tortellini
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • Salt and black pepper to taste
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large pot or Dutch oven, brown Italian sausage over medium heat, breaking it into small pieces, about 5-7 minutes.
  2. Add onion, carrots, and celery to the pot. Cook until vegetables are softened, about 5 minutes.
  3. Stir in garlic, Italian seasoning, and red pepper flakes. Cook until fragrant, about 1 minute.
  4. Pour in chicken broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 10 minutes.
  5. Add tortellini to the soup and cook according to package instructions, usually 7-9 minutes.
  6. Stir in spinach and heavy cream. Cook until spinach is wilted, about 2 minutes.
  7. Season with salt and black pepper to taste.
  8. Serve hot, topped with grated Parmesan cheese.

Notes

  • Use mild or hot Italian sausage based on your heat preference.
  • Fresh tortellini is preferred, but frozen works well too – just adjust cooking time accordingly.
  • Store leftovers in an airtight container for up to 3 days.
