- 1 pound Italian sausage, casings removed
- 1 large onion, diced
- 3 carrots, sliced
- 3 celery stalks, chopped
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes
- 6 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 package (20 oz) cheese tortellini
- 2 cups fresh spinach
- 1 cup heavy cream
- Salt and black pepper to taste
- 1/2 cup grated Parmesan cheese
Instructions
- In a large pot or Dutch oven, brown Italian sausage over medium heat, breaking it into small pieces, about 5-7 minutes.
- Add onion, carrots, and celery to the pot. Cook until vegetables are softened, about 5 minutes.
- Stir in garlic, Italian seasoning, and red pepper flakes. Cook until fragrant, about 1 minute.
- Pour in chicken broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Add tortellini to the soup and cook according to package instructions, usually 7-9 minutes.
- Stir in spinach and heavy cream. Cook until spinach is wilted, about 2 minutes.
- Season with salt and black pepper to taste.
- Serve hot, topped with grated Parmesan cheese.
Notes
- Use mild or hot Italian sausage based on your heat preference.
- Fresh tortellini is preferred, but frozen works well too – just adjust cooking time accordingly.
- Store leftovers in an airtight container for up to 3 days.
- The soup will thicken as it cools – thin with additional broth when reheating if needed.
