- 1 (16 oz) package potato gnocchi
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese, plus more for serving
- 2 cups fresh spinach
- 1 tsp dried Italian seasoning
- 1/2 tsp salt, or to taste
- 1/4 tsp black pepper, or to taste
- Fresh basil, chopped (for garnish)
Instructions
- Season the chicken cubes generously with salt and pepper.
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add chicken and cook until browned and cooked through (about 5-7 minutes). Remove chicken and set aside.
- Reduce heat to medium. Add onion to the skillet and sauté until softened, about 3 minutes. Add minced garlic and cook for 1 minute until fragrant.
- Stir in the chopped sun-dried tomatoes and Italian seasoning. Cook for 1 minute.
- Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer.
- Add the gnocchi to the broth mixture. Cook according to package directions (usually 3-5 minutes) until the gnocchi floats to the top.
- Reduce heat to low. Stir in the heavy cream and Parmesan cheese until the sauce is smooth and thickened slightly.
- Return the cooked chicken to the skillet. Stir in the fresh spinach until wilted, about 1-2 minutes.
- Taste and adjust seasoning if necessary. Serve immediately, garnished with fresh basil and extra Parmesan cheese.

- For extra flavor, use the oil from the sun-dried tomato jar instead of plain olive oil to sauté the aromatics.
