- 1 pound Italian sausage (mild or spicy, casings removed)
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 (5.2 oz) package Boursin cheese (Garlic & Fine Herbs)
- 1/2 cup pasta water (reserved from cooking pasta)
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese, plus more for serving
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 12 ounces pasta (such as penne, rigatoni, or cavatappi)
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Before draining, reserve 1/2 cup of the pasta water, then drain the pasta.
- While the pasta is cooking, heat the olive oil in a large skillet or Dutch oven over medium heat. Add the Italian sausage, breaking it up with a spoon, and cook until browned and cooked through, about 5-7 minutes. Drain any excess grease.
- Add the diced onion to the skillet with the sausage and cook until softened, about 3-5 minutes. Add the minced garlic and cook for another minute until fragrant.
- Reduce the heat to low. Add the Boursin cheese to the skillet and stir until it begins to melt and combine with the sausage mixture.
- Pour in the reserved pasta water and heavy cream. Stir well until the sauce is smooth and creamy.
- Add the cooked and drained pasta to the skillet. Toss to coat the pasta evenly with the sauce.
- Stir in the 1/4 cup grated Parmesan cheese, salt, and pepper. Taste and adjust seasonings as needed.
- Serve immediately, garnished with fresh chopped parsley and extra Parmesan cheese, if desired.
Notes
- For extra vegetables, consider adding a handful of spinach or chopped cherry tomatoes to the sauce during the last few minutes of cooking.
- If you prefer a thinner sauce, add a little more reserved pasta water until it reaches your desired consistency.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of milk or water if the sauce is too thick.
