Description

  • 1 tablespoon olive oil
  • 1 pound Italian sausage (mild or spicy, casings removed)
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 (5.2 oz) package Boursin cheese (Garlic & Fine Herbs)
  • 1/2 cup pasta water (reserved from cooking pasta)
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 12 ounces pasta (such as penne, rigatoni, or cavatappi)
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Before draining, reserve 1/2 cup of the pasta water, then drain the pasta.
  2. While the pasta is cooking, heat the olive oil in a large skillet or Dutch oven over medium heat. Add the Italian sausage, breaking it up with a spoon, and cook until browned and cooked through, about 5-7 minutes. Drain any excess grease.
  3. Add the diced onion to the skillet with the sausage and cook until softened, about 3-5 minutes. Add the minced garlic and cook for another minute until fragrant.
  4. Reduce the heat to low. Add the Boursin cheese to the skillet and stir until it begins to melt and combine with the sausage mixture.
  5. Pour in the reserved pasta water and heavy cream. Stir well until the sauce is smooth and creamy.
  6. Add the cooked and drained pasta to the skillet. Toss to coat the pasta evenly with the sauce.
  7. Stir in the 1/4 cup grated Parmesan cheese, salt, and pepper. Taste and adjust seasonings as needed.
  8. Serve immediately, garnished with fresh chopped parsley and extra Parmesan cheese, if desired.

Notes

  • For extra vegetables, consider adding a handful of spinach or chopped cherry tomatoes to the sauce during the last few minutes of cooking.
  • If you prefer a thinner sauce, add a little more reserved pasta water until it reaches your desired consistency.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of milk or water if the sauce is too thick.
