- 1 lb Italian Sausage (mild or hot, casings removed)
- 1 Yellow Onion (diced)
- 4 cloves Garlic (minced)
- 1 (14.5 ounce) can Crushed Tomatoes
- 1/2 cup Chicken Broth
- 1/2 cup Heavy Cream
- 1/2 cup Grated Parmesan Cheese (plus more for serving)
- 1/4 cup Fresh Parsley (chopped, plus more for garnish)
- Salt and Black Pepper (to taste)
Instructions
- Bring a large pot of salted water to a boil. Add the rigatoni and cook according to package directions until al dente. Drain and set aside.
- While the pasta is cooking, heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the Italian sausage (casings removed) and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
- Add the diced yellow onion to the skillet with the sausage and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Pour in the crushed tomatoes and chicken broth. Bring the mixture to a simmer, then reduce heat to low and let it cook for 10-15 minutes, allowing the flavors to meld.
- Stir in the heavy cream and grated Parmesan cheese. Cook for another 2-3 minutes, stirring constantly, until the sauce has thickened slightly.
- Add the cooked rigatoni to the skillet with the sauce and toss to coat evenly.
- Stir in the fresh chopped parsley. Season with salt and black pepper to taste.
- Serve immediately, garnished with extra grated Parmesan cheese and fresh parsley, if desired.
