  • 1 Yellow Onion (diced)
  • 4 cloves Garlic (minced)
  • 1 (14.5 ounce) can Crushed Tomatoes
  • 1/2 cup Chicken Broth
  • 1/2 cup Heavy Cream
  • 1/2 cup Grated Parmesan Cheese (plus more for serving)
  • 1/4 cup Fresh Parsley (chopped, plus more for garnish)
  • Salt and Black Pepper (to taste)

Instructions

  1. Bring a large pot of salted water to a boil. Add the rigatoni and cook according to package directions until al dente. Drain and set aside.
  2. While the pasta is cooking, heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the Italian sausage (casings removed) and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
  3. Add the diced yellow onion to the skillet with the sausage and cook until softened, about 5 minutes.
  4. Stir in the minced garlic and cook for another minute until fragrant.
  5. Pour in the crushed tomatoes and chicken broth. Bring the mixture to a simmer, then reduce heat to low and let it cook for 10-15 minutes, allowing the flavors to meld.
  6. Stir in the heavy cream and grated Parmesan cheese. Cook for another 2-3 minutes, stirring constantly, until the sauce has thickened slightly.
  7. Add the cooked rigatoni to the skillet with the sauce and toss to coat evenly.
  8. Stir in the fresh chopped parsley. Season with salt and black pepper to taste.
  9. Serve immediately, garnished with extra grated Parmesan cheese and fresh parsley, if desired.
