  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for garnish
  • 1/4 cup chopped fresh parsley, plus more for garnish
  • 1 pound rigatoni pasta
  • 1/2 cup pasta water (reserved)
  • Salt and black pepper to taste

Instructions

  1. Cook the Pasta: Cook rigatoni according to package directions, al dente. Reserve 1/2 cup of pasta water before draining.
  2. Brown the Sausage: In a large skillet over medium heat, crumble and cook the Italian sausage until browned, about 5-7 minutes. Drain off any excess grease.
  3. Sauté Garlic: Add olive oil and minced garlic to the skillet with the sausage. Sauté for about 1 minute, until fragrant.
  4. Make the Cream Sauce: Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
  5. Combine and Serve: Add the cooked rigatoni to the skillet with the sauce. Toss to coat. Add pasta water a little at a time to reach desired consistency. Stir in parsley. Serve immediately, garnished with extra Parmesan cheese and parsley.
