Ingredients
Scale
- 1 pound Italian sausage, removed from casings
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese, plus more for garnish
- 1/4 cup chopped fresh parsley, plus more for garnish
- 1 pound rigatoni pasta
- 1/2 cup pasta water (reserved)
- Salt and black pepper to taste
Instructions
- Cook the Pasta: Cook rigatoni according to package directions, al dente. Reserve 1/2 cup of pasta water before draining.
- Brown the Sausage: In a large skillet over medium heat, crumble and cook the Italian sausage until browned, about 5-7 minutes. Drain off any excess grease.
- Sauté Garlic: Add olive oil and minced garlic to the skillet with the sausage. Sauté for about 1 minute, until fragrant.
- Make the Cream Sauce: Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
- Combine and Serve: Add the cooked rigatoni to the skillet with the sauce. Toss to coat. Add pasta water a little at a time to reach desired consistency. Stir in parsley. Serve immediately, garnished with extra Parmesan cheese and parsley.
Notes
- Adjust the amount of garlic to your preference.
- For a spicier dish, use hot Italian sausage.
- Feel free to add other vegetables like bell peppers or onions to the skillet.
- If the sauce is too thick, add a little more pasta water.
