This Creamy Garlic Mushroom Chicken Pasta is a comforting and flavorful dish, perfect for a weeknight dinner. Tender chicken and earthy mushrooms are enveloped in a rich, creamy garlic sauce and tossed with your favorite pasta.

- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 pound pasta (such as penne, fettuccine, or linguine)
- 8 ounces cremini mushrooms, sliced
- 4 cloves garlic, minced
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese, plus more for garnish
- 1/4 cup olive oil
- 1/4 cup dry white wine (optional)
- 2 tablespoons butter
- 1/4 cup chopped fresh parsley, for garnish
- Salt and freshly ground black pepper to taste
Instructions
- Cook the pasta according to package directions. Reserve about 1 cup of pasta water before draining.
- Season the chicken with salt and pepper. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- Add the remaining 2 tablespoons of olive oil and butter to the skillet. Add the mushrooms and cook until softened and browned, about 5-7 minutes.
- Add the minced garlic and cook for about 1 minute, until fragrant.
- If using, pour in the white wine and let it simmer for a minute, scraping up any browned bits from the bottom of the skillet.
- Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and smooth.
- Add the cooked chicken and pasta to the sauce. Toss to combine. If the sauce is too thick, add a little of the reserved pasta water until you reach your desired consistency.
- Season with salt and pepper to taste.
- Garnish with fresh parsley and extra Parmesan cheese. Serve immediately.
Notes
- For a spicier dish, add a pinch of red pepper flakes to the sauce.
- You can substitute other types of mushrooms, such as shiitake or oyster mushrooms.
- If you don’t have white wine, you can omit it or substitute with chicken broth.
- Leftovers can be stored in the refrigerator for up to 3 days.
