Description

This Creamy Garlic Mushroom Chicken Pasta is a comforting and flavorful dish, perfect for a weeknight dinner. Tender chicken and earthy mushrooms are enveloped in a rich, creamy garlic sauce and tossed with your favorite pasta.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 pound pasta (such as penne, fettuccine, or linguine)
  • 8 ounces cremini mushrooms, sliced
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for garnish
  • 1/4 cup olive oil
  • 1/4 cup dry white wine (optional)
  • 2 tablespoons butter
  • 1/4 cup chopped fresh parsley, for garnish
  • Salt and freshly ground black pepper to taste

Instructions

  1. Cook the pasta according to package directions. Reserve about 1 cup of pasta water before draining.
  2. Season the chicken with salt and pepper. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Add the remaining 2 tablespoons of olive oil and butter to the skillet. Add the mushrooms and cook until softened and browned, about 5-7 minutes.
  4. Add the minced garlic and cook for about 1 minute, until fragrant.
  5. If using, pour in the white wine and let it simmer for a minute, scraping up any browned bits from the bottom of the skillet.
  6. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and smooth.
  7. Add the cooked chicken and pasta to the sauce. Toss to combine. If the sauce is too thick, add a little of the reserved pasta water until you reach your desired consistency.
  8. Season with salt and pepper to taste.
  9. Garnish with fresh parsley and extra Parmesan cheese. Serve immediately.

Notes

  • For a spicier dish, add a pinch of red pepper flakes to the sauce.
  • You can substitute other types of mushrooms, such as shiitake or oyster mushrooms.
  • If you don’t have white wine, you can omit it or substitute with chicken broth.
  • Leftovers can be stored in the refrigerator for up to 3 days.
