  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley, for garnish
  • Cooked pasta or rice, for serving

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Add the minced garlic to the skillet and cook for about 1 minute, until fragrant.
  4. Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet.
  5. Stir in the heavy cream and Parmesan cheese. Bring to a simmer.
  6. Return the chicken to the skillet and cook until the chicken is cooked through and the sauce has thickened, about 5-7 minutes.
  7. Garnish with fresh parsley and serve over cooked pasta or rice.
