- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tablespoon Cajun seasoning
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can crushed tomatoes
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 8 ounces rigatoni pasta
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta according to package directions. Drain and set aside.
- Season the chicken with Cajun seasoning, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
- Add the bell peppers and onion to the skillet and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute more.
- Stir in the crushed tomatoes and bring to a simmer.
- Reduce heat to low and stir in the heavy cream and Parmesan cheese. Season with salt and pepper to taste.
- Add the cooked chicken and rigatoni to the sauce. Toss to combine.
- Garnish with fresh parsley and serve immediately.
Notes
- For a spicier dish, add a pinch of cayenne pepper to the sauce.
- You can substitute andouille sausage for the chicken.
- If you don’t have heavy cream, you can use half-and-half, but the sauce won’t be as thick.
