  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can crushed tomatoes
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 8 ounces rigatoni pasta
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta according to package directions. Drain and set aside.
  2. Season the chicken with Cajun seasoning, salt, and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  4. Add the bell peppers and onion to the skillet and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute more.
  5. Stir in the crushed tomatoes and bring to a simmer.
  6. Reduce heat to low and stir in the heavy cream and Parmesan cheese. Season with salt and pepper to taste.
  7. Add the cooked chicken and rigatoni to the sauce. Toss to combine.
  8. Garnish with fresh parsley and serve immediately.

Notes

  • For a spicier dish, add a pinch of cayenne pepper to the sauce.
  • You can substitute andouille sausage for the chicken.
  • If you don’t have heavy cream, you can use half-and-half, but the sauce won’t be as thick.
