Ingredients

  • 1.5 lbs beef tenderloin, trimmed
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup heavy cream
  • 1/4 cup dry red wine (optional)
  • 2 tablespoons butter
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the beef tenderloin generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the tenderloin on all sides until browned, about 2-3 minutes per side. Remove from skillet and set aside.
  3. Add the onion to the skillet and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute more.
  4. Pour in the beef broth and red wine (if using), scraping up any browned bits from the bottom of the skillet. Bring to a simmer.
  5. Return the tenderloin to the skillet. Reduce heat to low, cover, and simmer for 20-30 minutes, or until the beef is cooked to your desired level of doneness.
  6. Remove the tenderloin from the skillet and let it rest for 10 minutes before slicing.
  7. Stir in the heavy cream and butter to the sauce. Season with thyme, salt, and pepper. Simmer for a few minutes until the sauce has thickened slightly.
  8. Slice the beef tenderloin and serve with the creamy sauce, garnished with fresh parsley.

Notes

  • For a richer flavor, use bone-in beef broth.
  • If you prefer a thicker sauce, you can whisk a tablespoon of cornstarch with a tablespoon of cold water and add it to the sauce during the last few minutes of cooking.
