Description

This Cranberry Roast Beef recipe combines the savory richness of roast beef with the sweet and tart flavors of cranberries, perfect for a festive meal.


Ingredients

  • 34 lb Beef Roast (such as chuck or rump)
  • 1 tbsp Olive Oil
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 large Onion, chopped
  • 2 cloves Garlic, minced
  • 1 cup Fresh Cranberries
  • 1 cup Beef Broth
  • 1/2 cup Dry Red Wine (optional)
  • 2 tbsp Brown Sugar
  • 1 tbsp Balsamic Vinegar
  • 1 tsp Dried Rosemary
  • 1 tsp Dried Thyme

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Season the roast generously with salt and pepper.
  3. Heat olive oil in a large Dutch oven or oven-safe pot over medium-high heat. Sear the roast on all sides until browned, about 2-3 minutes per side. Remove the roast and set aside.
  4. Add chopped onion to the pot and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
  5. Stir in fresh cranberries, beef broth, red wine (if using), brown sugar, balsamic vinegar, rosemary, and thyme. Bring to a simmer.
  6. Return the roast to the pot. The liquid should come about halfway up the side of the roast. If not, add more broth.
  7. Cover the pot and transfer to the preheated oven.
  8. Roast for 3-4 hours, or until the roast is fork-tender. Check the internal temperature with a meat thermometer; it should reach 190-200°F (88-93°C).
  9. Remove the roast from the pot and let it rest for 15 minutes before slicing.
  10. While the roast rests, skim off any excess fat from the sauce. If desired, you can thicken the sauce by simmering it on the stovetop for a few minutes until it reduces and thickens.
  11. Slice the roast and serve with the cranberry sauce.

Notes

  • For a thicker sauce, you can remove the roast and simmer the sauce on the stovetop for a few minutes to reduce and thicken it.
  • Leftover roast beef is delicious in sandwiches or salads.
  • Feel free to add other vegetables, such as carrots and celery, to the pot during the last hour of cooking.
