Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.

- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate medium bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the old-fashioned rolled oats, dried cranberries, and orange zest until evenly distributed.
- Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are golden brown and the centers are set.
- Let cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For extra flavor, you can soak the dried cranberries in a tablespoon of orange juice for 15 minutes before adding them to the dough.
