Ingredients

  • 1 tablespoon olive oil
  • 4 slices bacon, chopped
  • 1 pound boneless, skinless chicken breasts, cooked and shredded
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt, or to taste
  • 1 (14.1 ounce) package shelf-stable gnocchi
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh chives, for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium heat. Add bacon and cook until crispy. Remove bacon with a slotted spoon and set aside, reserving bacon grease in the skillet.
  2. Add the chopped onion to the skillet and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more, until fragrant.
  3. Stir in cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper. Bring to a simmer.
  4. Add the shredded chicken and gnocchi to the sauce. Stir to combine.
  5. Cook, stirring occasionally, until the gnocchi is heated through and the sauce has thickened, about 5-7 minutes.
  6. Stir in most of the cheddar cheese, reserving some for topping.
  7. Top with the remaining cheddar cheese and the cooked bacon.
  8. Cover the skillet and cook until the cheese is melted, about 2 minutes.
  9. Garnish with fresh chives, if desired. Serve immediately.

Notes

  • For a spicier kick, add a pinch of red pepper flakes.
  • You can use rotisserie chicken to save time.
  • If the sauce is too thick, add a little more milk.
  • Feel free to add other vegetables, such as chopped bell peppers or mushrooms.
