- 1 tablespoon olive oil
- 4 slices bacon, chopped
- 1 pound boneless, skinless chicken breasts, cooked and shredded
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (10.75 ounce) can condensed cream of chicken soup
- 1 cup milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt, or to taste
- 1 (14.1 ounce) package shelf-stable gnocchi
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh chives, for garnish (optional)
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium heat. Add bacon and cook until crispy. Remove bacon with a slotted spoon and set aside, reserving bacon grease in the skillet.
- Add the chopped onion to the skillet and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more, until fragrant.
- Stir in cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper. Bring to a simmer.
- Add the shredded chicken and gnocchi to the sauce. Stir to combine.
- Cook, stirring occasionally, until the gnocchi is heated through and the sauce has thickened, about 5-7 minutes.
- Stir in most of the cheddar cheese, reserving some for topping.
- Top with the remaining cheddar cheese and the cooked bacon.
- Cover the skillet and cook until the cheese is melted, about 2 minutes.
- Garnish with fresh chives, if desired. Serve immediately.
Notes
- For a spicier kick, add a pinch of red pepper flakes.
- You can use rotisserie chicken to save time.
- If the sauce is too thick, add a little more milk.
