- ½ teaspoon vanilla extract
Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined and a soft dough forms.
- Divide the dough in half. On a lightly floured surface, roll out one half of the dough into a rectangle, about 1/4 inch thick.
- Prepare the Cinnamon Filling: In a small bowl, combine the brown sugar and cinnamon.
- Brush the melted butter evenly over the rolled-out dough. Sprinkle half of the cinnamon sugar mixture over the buttered dough.
- Starting from one long side, carefully roll up the dough tightly into a log.
- Slice the log into 1/2-inch thick cookies. Repeat with the remaining dough and filling.
- Place the cookies on the prepared baking sheets, about 1 inch apart.
- Bake for 8-10 minutes, or until the edges are lightly golden. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
- Prepare the Cream Cheese Icing: In a medium bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar, milk, and vanilla extract, beating until smooth and creamy.
- Once the cookies are completely cool, spread or drizzle the cream cheese icing over each cookie.

- For extra flavor, you can add a pinch of nutmeg or cardamom to the cinnamon filling.
