Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • For the Cinnamon Filling:
  • ½ cup packed light brown sugar
  • 2 tablespoons ground cinnamon
  • ¼ cup (½ stick) unsalted butter, melted
  • For the Cream Cheese Icing:
  • 4 ounces cream cheese, softened
  • ½ cup powdered sugar
  • 1 tablespoon milk (or heavy cream)
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined and a soft dough forms.
  4. Divide the dough in half. On a lightly floured surface, roll out one half of the dough into a rectangle, about 1/4 inch thick.
  5. Prepare the Cinnamon Filling: In a small bowl, combine the brown sugar and cinnamon.
  6. Brush the melted butter evenly over the rolled-out dough. Sprinkle half of the cinnamon sugar mixture over the buttered dough.
  7. Starting from one long side, carefully roll up the dough tightly into a log.
  8. Slice the log into 1/2-inch thick cookies. Repeat with the remaining dough and filling.
  9. Place the cookies on the prepared baking sheets, about 1 inch apart.
  10. Bake for 8-10 minutes, or until the edges are lightly golden. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
  11. Prepare the Cream Cheese Icing: In a medium bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar, milk, and vanilla extract, beating until smooth and creamy.
  12. Once the cookies are completely cool, spread or drizzle the cream cheese icing over each cookie.
  13. Serve and enjoy!

Notes

  • For extra flavor, you can add a pinch of nutmeg or cardamom to the cinnamon filling.
  • If the dough is too sticky to roll, chill it in the refrigerator for 15-20 minutes.
