- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon salt
- 1 large egg, lightly beaten
- ¾ cup milk
- ¼ cup melted unsalted butter
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen cranberries (do not thaw if frozen)
- ½ cup white chocolate chips (optional)
- Turbinado sugar, for sprinkling (optional)
Instructions
- Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease generously.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, nutmeg, and salt.
- In a separate medium bowl, whisk together the egg, milk, melted butter, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir with a spatula until just combined. Be careful not to overmix; a few lumps are okay.
- Gently fold in the cranberries and white chocolate chips (if using).
- Divide the batter evenly among the 12 muffin cups. If desired, sprinkle the tops with turbinado sugar for a lovely crunch.
- Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean and the tops are golden brown.
- Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
Notes
- For an extra festive touch, you can add a pinch of orange zest to the batter.
- These muffins freeze beautifully. Once cooled, place them in an airtight freezer bag for up to 3 months. Thaw at room temperature or warm gently in the microwave.
- If using frozen cranberries, do not thaw them before adding to the batter to prevent the color from bleeding.
