- ½ cup granulated sugar
- 1 large egg yolk
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- ¼ teaspoon salt
- 4 ounces semi-sweet chocolate, chopped (or chocolate chips)
- 1 tablespoon unsalted butter
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg yolk and vanilla extract until well combined.
- In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Roll the dough into 1-inch balls and place them about 2 inches apart on the prepared baking sheet.
- Using your thumb or the back of a small spoon, make an indentation in the center of each cookie.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- While the cookies are baking, prepare the chocolate filling. In a microwave-safe bowl, combine the chopped chocolate and 1 tablespoon of butter. Microwave in 30-second intervals, stirring after each, until melted and smooth. Alternatively, melt over a double boiler.
- Once the cookies are out of the oven, immediately re-press the indentations if they have puffed up.
- Spoon the melted chocolate into the indentations of each warm cookie.
- Let the cookies cool completely on a wire rack to allow the chocolate to set.
Notes
- For extra flavor, you can add a pinch of cinnamon or espresso powder to the cookie dough.
- If you don’t have semi-sweet chocolate, milk chocolate or dark chocolate can be used, depending on your preference.
- Store cookies in an airtight container at room temperature for up to 5 days.
