Description

These Chocolate Thumbprint Cookies are a delightful treat that combines a tender, buttery cookie base with a rich, melted chocolate center. Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • ½ cup granulated sugar
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • ¼ teaspoon salt
  • 4 ounces semi-sweet chocolate, chopped (or chocolate chips)
  • 1 tablespoon unsalted butter

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg yolk and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Roll the dough into 1-inch balls and place them about 2 inches apart on the prepared baking sheet.
  6. Using your thumb or the back of a small spoon, make an indentation in the center of each cookie.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. While the cookies are baking, prepare the chocolate filling. In a microwave-safe bowl, combine the chopped chocolate and 1 tablespoon of butter. Microwave in 30-second intervals, stirring after each, until melted and smooth. Alternatively, melt over a double boiler.
  9. Once the cookies are out of the oven, immediately re-press the indentations if they have puffed up.
  10. Spoon the melted chocolate into the indentations of each warm cookie.
  11. Let the cookies cool completely on a wire rack to allow the chocolate to set.

Notes

  • For extra flavor, you can add a pinch of cinnamon or espresso powder to the cookie dough.
  • If you don’t have semi-sweet chocolate, milk chocolate or dark chocolate can be used, depending on your preference.
