These no-bake chocolate peanut butter buckeyes are incredibly easy to make and are sure to be a hit with everyone! They feature a creamy peanut butter filling enrobed in a rich chocolate coating, making them an irresistible treat.

- 1 1/2 cups powdered sugar
- 1 cup creamy peanut butter
- 1/2 cup (1 stick) unsalted butter, softened
- 1 teaspoon vanilla extract
- 12 ounces semi-sweet chocolate chips
- 2 tablespoons shortening (like Crisco)
Instructions
- In a large bowl, combine the powdered sugar, peanut butter, softened butter, and vanilla extract. Mix until well combined and a smooth dough forms.
- Roll the peanut butter mixture into 1-inch balls. Place them on a baking sheet lined with parchment paper.
- Insert a toothpick into each peanut butter ball, leaving a small portion exposed at the bottom. This will be your handle for dipping.
- Place the baking sheet in the freezer for at least 15-20 minutes, or until the peanut butter balls are firm.
- While the peanut butter balls are chilling, melt the chocolate chips and shortening in a microwave-safe bowl. Heat in 30-second intervals, stirring after each, until smooth and fully melted. Alternatively, melt over a double boiler.
- Remove the peanut butter balls from the freezer. Holding a ball by the toothpick, dip it into the melted chocolate, leaving a small circle of peanut butter exposed at the top to resemble a buckeye.
- Return the dipped buckeyes to the parchment-lined baking sheet. Carefully remove the toothpicks and smooth over the small holes with a clean toothpick or your finger if desired.
- Refrigerate the buckeyes for at least 30 minutes, or until the chocolate is set.
- Store buckeyes in an airtight container in the refrigerator.
Notes
- For best results, use good quality peanut butter and chocolate.
- If the peanut butter mixture is too sticky to roll, add a little more powdered sugar.
