These no-bake chocolate peanut butter buckeyes are incredibly easy to make and are sure to be a hit with everyone! They feature a creamy peanut butter filling enrobed in a rich chocolate coating, making them an irresistible treat.


Ingredients

  • 1 1/2 cups powdered sugar
  • 1 cup creamy peanut butter
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 12 ounces semi-sweet chocolate chips
  • 2 tablespoons shortening (like Crisco)

Instructions

  1. In a large bowl, combine the powdered sugar, peanut butter, softened butter, and vanilla extract. Mix until well combined and a smooth dough forms.
  2. Roll the peanut butter mixture into 1-inch balls. Place them on a baking sheet lined with parchment paper.
  3. Insert a toothpick into each peanut butter ball, leaving a small portion exposed at the bottom. This will be your handle for dipping.
  4. Place the baking sheet in the freezer for at least 15-20 minutes, or until the peanut butter balls are firm.
  5. While the peanut butter balls are chilling, melt the chocolate chips and shortening in a microwave-safe bowl. Heat in 30-second intervals, stirring after each, until smooth and fully melted. Alternatively, melt over a double boiler.
  6. Remove the peanut butter balls from the freezer. Holding a ball by the toothpick, dip it into the melted chocolate, leaving a small circle of peanut butter exposed at the top to resemble a buckeye.
  7. Return the dipped buckeyes to the parchment-lined baking sheet. Carefully remove the toothpicks and smooth over the small holes with a clean toothpick or your finger if desired.
  8. Refrigerate the buckeyes for at least 30 minutes, or until the chocolate is set.
  9. Store buckeyes in an airtight container in the refrigerator.
