These Chipotle Lime Chicken Street Tacos are an absolute game-changer for weeknights!

- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 chipotle pepper in adobo sauce, minced (plus 1 teaspoon adobo sauce)
- Juice of 1 lime (about 2 tablespoons)
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon dried oregano
- Salt and black pepper to taste
- 12–16 small corn or flour tortillas
- Optional toppings: chopped red onion, cilantro, crumbled cojita cheese, avocado, sour cream, extra lime wedges
Instructions
- In a medium bowl, combine the chopped chicken thighs, olive oil, minced garlic, minced chipotle pepper and adobo sauce, lime juice, chili powder, cumin, oregano, salt, and pepper. Toss well to ensure all chicken is evenly coated.
- Heat a large skillet over medium-high heat. Once hot, add the marinated chicken in a single layer. Cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and lightly browned.
- While the chicken cooks, warm your tortillas. You can do this by heating them directly over a gas flame for a few seconds per side, in a dry skillet over medium heat, or wrapped in a damp paper towel and microwaved for 30-60 seconds.
- Once the chicken is cooked, remove the skillet from the heat.
- Assemble your tacos: Spoon the chipotle lime chicken into warm tortillas and top with your favorite additions like chopped red onion, fresh cilantro, cojita cheese, avocado, or a dollop of sour cream. Serve immediately with extra lime wedges.
Notes
- For extra spice, add another chipotle pepper or a pinch of cayenne pepper to the marinade.
- If you prefer chicken breasts, you can use them, but chicken thighs tend to stay juicier and more tender.
- Leftover chicken can be stored in an airtight container in the refrigerator for up to 3 days. It’s great for salads, rice bowls, or even quesadillas!
- Don’t overcrowd the skillet when cooking the chicken; cook in batches if necessary to ensure even browning.
