  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste
  • 46 pita breads
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced red onion
  • For the Sauce:
  • 1/2 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried)
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine the chicken pieces with olive oil, paprika, cumin, garlic powder, onion powder, salt, and pepper. Toss to coat the chicken evenly.
  2. Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, or until cooked through and lightly browned.
  3. While the chicken is cooking, prepare the sauce. In a small bowl, whisk together Greek yogurt, lemon juice, fresh dill, minced garlic, salt, and pepper.
  4. Warm the pita breads according to package directions (you can warm them in a dry skillet, microwave, or oven).
  5. Once warmed, carefully open each pita bread to create a pocket.
  6. Fill each pita with shredded lettuce, diced tomatoes, sliced red onion, and the cooked chicken.
  7. Drizzle a generous amount of the prepared yogurt sauce over the filling.
