  • 1 pound boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
  • 1 large yellow onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 8 ounces egg noodles
  • ¼ cup unsalted butter
  • 2 cloves garlic, minced
  • ¼ cup fresh parsley, chopped
  • 2 tablespoons fresh chives, chopped

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken and cook until lightly browned, about 5-7 minutes. Remove chicken and set aside.
  2. Add onion, carrots, and celery to the pot. Cook until softened, about 8-10 minutes.
  3. Return chicken to the pot. Pour in chicken broth. Stir in thyme, rosemary, oregano, black pepper, and salt. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Add egg noodles and cook according to package directions, about 5-7 minutes, or until al dente.
  5. While noodles are cooking, melt butter in a small saucepan over medium-low heat. Add minced garlic and cook for 1 minute until fragrant. Stir in fresh parsley and chives.
  6. Ladle soup into bowls. Drizzle each serving with the herb butter broth. Serve hot.

  • For extra flavor, you can roast the chicken thighs before adding them to the soup.
