Description

This easy Chicken Fajita Skillet delivers massive Tex-Mex flavor with perfectly seasoned chicken, colorful bell peppers, and sweet onions, all cooked quickly in one pan for a satisfying weeknight dinner.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into thin strips
  • 2 tablespoons olive oil, divided
  • 1 large onion, sliced
  • 2 large bell peppers (one red, one green), sliced
  • 3 tablespoons pre-made fajita seasoning mix (or homemade blend)
  • 1/4 cup chicken broth or water
  • Juice of 1 lime
  • Optional toppings: Flour tortillas, shredded cheese, sour cream, salsa, avocado or guacamole

Instructions

  1. In a medium bowl, toss the chicken strips with 2 tablespoons of the fajita seasoning until evenly coated.
  2. Heat 1 tablespoon of olive oil in a large skillet (cast iron works best) over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove chicken from the skillet and set aside.
  3. Add the remaining 1 tablespoon of olive oil to the same skillet. Add the sliced onions and bell peppers. Sprinkle with the remaining 1 tablespoon of fajita seasoning. Sauté for 5-7 minutes until the vegetables begin to soften and char slightly.
  4. Pour in the chicken broth (or water) and scrape up any browned bits from the bottom of the pan. Let it simmer for 1 minute.
  5. Return the cooked chicken to the skillet with the vegetables. Stir well to combine and heat through for about 1 minute.
  6. Remove the skillet from the heat and squeeze the fresh lime juice over everything. Toss gently.
  7. Serve immediately directly from the skillet, or spoon onto warm tortillas with your favorite toppings.

Notes

  • For extra smoky flavor, add 1/2 teaspoon of smoked paprika to your seasoning blend.
  • If using homemade seasoning, a typical blend includes chili powder, cumin, oregano, garlic powder, and onion powder.
  • To make this dish low-carb, skip the tortillas and serve over cauliflower rice or a bed of lettuce.
