Description
This easy Chicken Fajita Skillet delivers massive Tex-Mex flavor with perfectly seasoned chicken, colorful bell peppers, and sweet onions, all cooked quickly in one pan for a satisfying weeknight dinner.
Ingredients
Scale
- 1.5 lbs boneless, skinless chicken breasts, cut into thin strips
- 2 tablespoons olive oil, divided
- 1 large onion, sliced
- 2 large bell peppers (one red, one green), sliced
- 3 tablespoons pre-made fajita seasoning mix (or homemade blend)
- 1/4 cup chicken broth or water
- Juice of 1 lime
- Optional toppings: Flour tortillas, shredded cheese, sour cream, salsa, avocado or guacamole
Instructions
- In a medium bowl, toss the chicken strips with 2 tablespoons of the fajita seasoning until evenly coated.
- Heat 1 tablespoon of olive oil in a large skillet (cast iron works best) over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove chicken from the skillet and set aside.
- Add the remaining 1 tablespoon of olive oil to the same skillet. Add the sliced onions and bell peppers. Sprinkle with the remaining 1 tablespoon of fajita seasoning. Sauté for 5-7 minutes until the vegetables begin to soften and char slightly.
- Pour in the chicken broth (or water) and scrape up any browned bits from the bottom of the pan. Let it simmer for 1 minute.
- Return the cooked chicken to the skillet with the vegetables. Stir well to combine and heat through for about 1 minute.
- Remove the skillet from the heat and squeeze the fresh lime juice over everything. Toss gently.
- Serve immediately directly from the skillet, or spoon onto warm tortillas with your favorite toppings.
Notes
- For extra smoky flavor, add 1/2 teaspoon of smoked paprika to your seasoning blend.
- If using homemade seasoning, a typical blend includes chili powder, cumin, oregano, garlic powder, and onion powder.
- To make this dish low-carb, skip the tortillas and serve over cauliflower rice or a bed of lettuce.
