Description

These Chewy Toffee Chocolate Chunk Cookies are a delightful family favorite that brings together the rich, buttery chewiness of toffee with generous chunks of dark chocolate. Perfect for an afternoon treat or a special dessert, they’re surprisingly easy to make and guaranteed to disappear fast!


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • ¾ cup granulated sugar
  • ¾ cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (6 oz) chocolate chunks (dark or semi-sweet)
  • 1 cup (6 oz) toffee bits (without chocolate coating)

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate medium bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Fold in the chocolate chunks and toffee bits.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 9-11 minutes, or until the edges are golden brown and the centers are still slightly soft.
  9. Remove from oven and let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For extra chewiness, underbake them slightly so the centers are still a bit gooey.
  • Store cookies in an airtight container at room temperature for up to 3-4 days.
  • These cookies also freeze well! Place baked and cooled cookies in a freezer-safe bag or container for up to 3 months.
  • If you can’t find toffee bits without chocolate, you can use Heath Bar bits, but be aware they will add a little chocolate to the mix.
