Description

These Cheesy Potato Burritos with Crispy Tater Tots are a comforting and satisfying meal. They’re packed with seasoned potatoes, melty cheese, and your favorite burrito toppings, all wrapped in a warm tortilla. The crispy tater tots on the side add the perfect crunch!


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (20 ounce) package frozen tater tots
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • Salt and pepper to taste
  • 3 medium russet potatoes, peeled and diced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 large flour tortillas
  • Optional toppings: sour cream, salsa, guacamole, chopped cilantro

Instructions

  1. Preheat oven to 400°F (200°C). Toss the tater tots with a little oil and salt and pepper. Spread on a baking sheet and bake for 20-25 minutes, or until golden brown and crispy.
  2. While the tater tots are baking, heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute more.
  3. Add the diced potatoes, chili powder, cumin, smoked paprika, salt, and pepper to the skillet. Cook, stirring occasionally, until the potatoes are tender, about 15-20 minutes.
  4. Remove the skillet from the heat and stir in the cheddar and Monterey Jack cheeses until melted.
  5. Warm the tortillas according to package directions.
  6. Assemble the burritos: Place a portion of the potato mixture in the center of each tortilla. Top with your favorite toppings.
  7. Fold the sides of the tortilla over the filling, then fold up the bottom and roll tightly.
  8. Serve immediately with crispy tater tots.

Notes

  • For spicier burritos, add a pinch of cayenne pepper or use a spicier cheese.
  • You can add cooked ground beef or black beans to the potato mixture for extra protein.
  • To make the burritos extra crispy, you can lightly toast them in a skillet after assembling.
