These Cheesy Potato Burritos with Crispy Tater Tots are a comforting and satisfying meal. They’re packed with seasoned potatoes, melty cheese, and your favorite burrito toppings, all wrapped in a warm tortilla. The crispy tater tots on the side add the perfect crunch!

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (20 ounce) package frozen tater tots
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon smoked paprika
- Salt and pepper to taste
- 3 medium russet potatoes, peeled and diced
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 4 large flour tortillas
- Optional toppings: sour cream, salsa, guacamole, chopped cilantro
Instructions
- Preheat oven to 400°F (200°C). Toss the tater tots with a little oil and salt and pepper. Spread on a baking sheet and bake for 20-25 minutes, or until golden brown and crispy.
- While the tater tots are baking, heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute more.
- Add the diced potatoes, chili powder, cumin, smoked paprika, salt, and pepper to the skillet. Cook, stirring occasionally, until the potatoes are tender, about 15-20 minutes.
- Remove the skillet from the heat and stir in the cheddar and Monterey Jack cheeses until melted.
- Warm the tortillas according to package directions.
- Assemble the burritos: Place a portion of the potato mixture in the center of each tortilla. Top with your favorite toppings.
- Fold the sides of the tortilla over the filling, then fold up the bottom and roll tightly.
- Serve immediately with crispy tater tots.
Notes
- For spicier burritos, add a pinch of cayenne pepper or use a spicier cheese.
- You can add cooked ground beef or black beans to the potato mixture for extra protein.
- To make the burritos extra crispy, you can lightly toast them in a skillet after assembling.
