  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (20 ounce) package cheese tortellini
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus extra for garnish
  • 1/4 cup chopped fresh parsley, for garnish
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper.
  2. Add chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. In the same skillet, cook tortellini according to package directions.
  4. Add heavy cream, Parmesan cheese, minced garlic, and red pepper flakes (if using) to the skillet. Stir to combine.
  5. Bring the sauce to a simmer and cook for 2-3 minutes, or until slightly thickened.
  6. Return the cooked chicken to the skillet.
  7. Stir in the cooked tortellini. Toss to coat everything in the creamy sauce.
  8. Serve immediately, garnished with fresh parsley and extra Parmesan cheese.
