Ingredients
Scale
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 (20 ounce) package cheese tortellini
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese, plus extra for garnish
- 1/4 cup chopped fresh parsley, for garnish
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper.
- Add chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- In the same skillet, cook tortellini according to package directions.
- Add heavy cream, Parmesan cheese, minced garlic, and red pepper flakes (if using) to the skillet. Stir to combine.
- Bring the sauce to a simmer and cook for 2-3 minutes, or until slightly thickened.
- Return the cooked chicken to the skillet.
- Stir in the cooked tortellini. Toss to coat everything in the creamy sauce.
- Serve immediately, garnished with fresh parsley and extra Parmesan cheese.
Notes
- For a spicier dish, add more red pepper flakes.
- You can substitute chicken thighs for chicken breasts. Adjust cooking time as needed.
- If you prefer a lighter sauce, use half-and-half instead of heavy cream.
