Description

This Cheesy Beef and Potato Bake is a hearty, comforting dish, perfect for a weeknight dinner. Tender beef and potatoes are enveloped in a creamy, cheesy sauce and baked to golden perfection.


Ingredients

  • 1.5 lbs ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 3 lbs potatoes, peeled and sliced
  • 2 cups beef broth
  • 1 cup heavy cream
  • 8 oz cream cheese, softened
  • 2 cups shredded cheddar cheese, divided

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.
  3. Add the chopped onion and minced garlic to the skillet and cook until softened, about 5 minutes.
  4. Stir in the thyme, rosemary, salt, and pepper.
  5. In a large baking dish, layer half of the sliced potatoes.
  6. Top with the beef mixture.
  7. Pour in beef broth.
  8. In a separate bowl, whisk together the heavy cream, softened cream cheese, and half of the shredded cheddar cheese until smooth.
  9. Pour the cream cheese mixture over the beef.
  10. Top with the remaining potato slices.
  11. Cover the dish with foil and bake for 45 minutes.
  12. Remove the foil and sprinkle the remaining cheddar cheese over the potatoes.
  13. Bake for another 15-20 minutes, or until the potatoes are tender and the cheese is melted and bubbly.
  14. Let stand for a few minutes before serving.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the beef mixture.
  • You can use different types of cheese, such as Monterey Jack or Gruyere.
  • If potatoes brown too quickly, tent with foil.
