This Cheesy Beef and Potato Bake is a hearty, comforting dish, perfect for a weeknight dinner. Tender beef and potatoes are enveloped in a creamy, cheesy sauce and baked to golden perfection.

- 1.5 lbs ground beef
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 3 lbs potatoes, peeled and sliced
- 2 cups beef broth
- 1 cup heavy cream
- 8 oz cream cheese, softened
- 2 cups shredded cheddar cheese, divided
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.
- Add the chopped onion and minced garlic to the skillet and cook until softened, about 5 minutes.
- Stir in the thyme, rosemary, salt, and pepper.
- In a large baking dish, layer half of the sliced potatoes.
- Top with the beef mixture.
- Pour in beef broth.
- In a separate bowl, whisk together the heavy cream, softened cream cheese, and half of the shredded cheddar cheese until smooth.
- Pour the cream cheese mixture over the beef.
- Top with the remaining potato slices.
- Cover the dish with foil and bake for 45 minutes.
- Remove the foil and sprinkle the remaining cheddar cheese over the potatoes.
- Bake for another 15-20 minutes, or until the potatoes are tender and the cheese is melted and bubbly.
- Let stand for a few minutes before serving.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the beef mixture.
- You can use different types of cheese, such as Monterey Jack or Gruyere.
- If potatoes brown too quickly, tent with foil.
