Description

This Cheesy Baked Tortellini with Spinach is a comforting and easy-to-make dish, perfect for a weeknight meal. It combines the creamy goodness of cheese with the freshness of spinach, all baked to golden perfection.


Ingredients

  • 1 (20 ounce) package cheese tortellini
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 10 ounces fresh spinach, chopped
  • 1 (15 ounce) container ricotta cheese
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 1/4 cup heavy cream
  • Salt and pepper to taste
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook tortellini according to package directions. Drain and set aside.
  3. Heat olive oil in a large skillet over medium heat. Add garlic and cook for 30 seconds until fragrant.
  4. Add spinach and cook until wilted, about 2-3 minutes. Season with salt and pepper.
  5. In a large bowl, combine ricotta cheese, Parmesan cheese, and heavy cream. Season with salt and pepper.
  6. Stir in the cooked spinach and tortellini.
  7. In a 9×13 inch baking dish, spread a thin layer of marinara sauce.
  8. Pour the tortellini mixture over the marinara sauce.
  9. Top with the remaining marinara sauce and mozzarella cheese. Sprinkle with additional Parmesan cheese.
  10. Bake for 20-25 minutes, or until the cheese is melted and bubbly and the dish is heated through.
  11. Let stand for a few minutes before serving.

Notes

  • For a spicier dish, add a pinch of red pepper flakes to the spinach while cooking.
  • You can use frozen spinach, but be sure to thaw and squeeze out excess water before adding it to the skillet.
