- 1 (20 ounce) package cheese tortellini
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 10 ounces fresh spinach, chopped
- 1 (15 ounce) container ricotta cheese
- 1/2 cup grated Parmesan cheese, plus more for topping
- 1/4 cup heavy cream
- Salt and pepper to taste
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese
Instructions
- Preheat oven to 375°F (190°C).
- Cook tortellini according to package directions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add garlic and cook for 30 seconds until fragrant.
- Add spinach and cook until wilted, about 2-3 minutes. Season with salt and pepper.
- In a large bowl, combine ricotta cheese, Parmesan cheese, and heavy cream. Season with salt and pepper.
- Stir in the cooked spinach and tortellini.
- In a 9×13 inch baking dish, spread a thin layer of marinara sauce.
- Pour the tortellini mixture over the marinara sauce.
- Top with the remaining marinara sauce and mozzarella cheese. Sprinkle with additional Parmesan cheese.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly and the dish is heated through.
- Let stand for a few minutes before serving.
Notes
- For a spicier dish, add a pinch of red pepper flakes to the spinach while cooking.
- You can use frozen spinach, but be sure to thaw and squeeze out excess water before adding it to the skillet.
- Feel free to add other vegetables like mushrooms or bell peppers.
