Description

Ingredients

  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional, for extra flavor)
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup yellow cake mix (dry, from a box)
  • 1 cup Christmas sprinkles (nonpareils or jimmies work best)

Instructions

  1. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Beat in the eggs one at a time, then stir in the vanilla extract and almond extract (if using).
  3. In a separate medium bowl, whisk together the all-purpose flour, baking powder, salt, and dry yellow cake mix.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Gently fold in the Christmas sprinkles until evenly distributed throughout the dough.
  6. Cover the bowl with plastic wrap and chill the dough in the refrigerator for at least 30 minutes (or up to 2 hours) to prevent spreading.
  7. Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
  8. Scoop rounded tablespoons of dough and roll them into balls. Place them about 2 inches apart on the prepared baking sheets.
  9. Bake for 8-10 minutes, or until the edges are lightly golden and the centers are set.
  10. Remove from the oven and let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
