- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract

- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup yellow cake mix (dry, from a box)
- 1 cup Christmas sprinkles (nonpareils or jimmies work best)
Instructions
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract and almond extract (if using).
- In a separate medium bowl, whisk together the all-purpose flour, baking powder, salt, and dry yellow cake mix.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Gently fold in the Christmas sprinkles until evenly distributed throughout the dough.
- Cover the bowl with plastic wrap and chill the dough in the refrigerator for at least 30 minutes (or up to 2 hours) to prevent spreading.
- Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
- Scoop rounded tablespoons of dough and roll them into balls. Place them about 2 inches apart on the prepared baking sheets.
- Bake for 8-10 minutes, or until the edges are lightly golden and the centers are set.
- Remove from the oven and let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.

- For extra festive cookies, press a few extra sprinkles onto the tops of the cookie dough balls before baking.
