  • 1 pound sirloin steak, thinly sliced against the grain

  • 1 large green bell pepper, chopped
  • 1 large red bell pepper, chopped
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons Cajun seasoning (adjust to taste)
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup beef broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 2 tablespoons chopped fresh parsley, for garnish
  • Salt and black pepper to taste

Instructions

  1. Cook rigatoni according to package directions until al dente. Drain and set aside.
  2. While pasta cooks, heat olive oil in a large skillet or Dutch oven over medium-high heat. Add sliced steak and cook until browned, about 3-4 minutes per side. Remove steak from skillet and set aside.
  3. Add green bell pepper, red bell pepper, and onion to the same skillet. Cook, stirring occasionally, until vegetables are tender-crisp, about 5-7 minutes.
  4. Stir in minced garlic and Cajun seasoning. Cook for 1 minute more, until fragrant.
  5. Stir in diced tomatoes (undrained) and beef broth. Bring to a simmer and cook for 5 minutes, allowing flavors to meld.
  6. Reduce heat to low and stir in heavy cream and Parmesan cheese. Cook, stirring, until the sauce slightly thickens, about 3-5 minutes.
  7. Return cooked steak to the skillet with the sauce. Add the drained rigatoni and toss to coat everything evenly.
  8. Taste and adjust seasoning with salt and pepper as needed.
  9. Serve hot, garnished with fresh parsley and extra Parmesan cheese.

Notes

  • For extra spice, add a pinch of cayenne pepper with the Cajun seasoning.
  • If you prefer a thicker sauce, you can simmer it a bit longer before adding the cream.
