- 1 pound rigatoni pasta
- 1 pound sirloin steak, thinly sliced against the grain
- 1 tablespoon olive oil
- 1 large green bell pepper, chopped
- 1 large red bell pepper, chopped
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons Cajun seasoning (adjust to taste)
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup beef broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese, plus more for serving
- 2 tablespoons chopped fresh parsley, for garnish
- Salt and black pepper to taste
Instructions
- Cook rigatoni according to package directions until al dente. Drain and set aside.
- While pasta cooks, heat olive oil in a large skillet or Dutch oven over medium-high heat. Add sliced steak and cook until browned, about 3-4 minutes per side. Remove steak from skillet and set aside.
- Add green bell pepper, red bell pepper, and onion to the same skillet. Cook, stirring occasionally, until vegetables are tender-crisp, about 5-7 minutes.
- Stir in minced garlic and Cajun seasoning. Cook for 1 minute more, until fragrant.
- Stir in diced tomatoes (undrained) and beef broth. Bring to a simmer and cook for 5 minutes, allowing flavors to meld.
- Reduce heat to low and stir in heavy cream and Parmesan cheese. Cook, stirring, until the sauce slightly thickens, about 3-5 minutes.
- Return cooked steak to the skillet with the sauce. Add the drained rigatoni and toss to coat everything evenly.
- Taste and adjust seasoning with salt and pepper as needed.
- Serve hot, garnished with fresh parsley and extra Parmesan cheese.

- For extra spice, add a pinch of cayenne pepper with the Cajun seasoning.
- If you prefer a thicker sauce, you can simmer it a bit longer before adding the cream.
