Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss quartered baby gold potatoes with 1 tablespoon olive oil, 1 teaspoon salt, and 1/2 teaspoon black pepper on a baking sheet.
  3. Roast for 20-25 minutes, or until tender and lightly browned.
  4. While potatoes are roasting, pat steak cubes dry with paper towels.
  5. Toss steak cubes with 2 tablespoons olive oil, 1 teaspoon salt, and 1/2 teaspoon black pepper.
  6. Heat a large skillet over medium-high heat.
  7. Sear steak in batches for 2-3 minutes per side, until browned and cooked to your desired doneness.
  8. Remove steak from skillet and set aside.
  9. Reduce heat to medium. Add butter and minced garlic to the skillet. Cook until butter is melted and fragrant, about 1 minute.
  10. Return steak to the skillet and toss to coat in the butter-garlic sauce.
  11. Stir in fresh chopped parsley.
