Description

These BBQ Chicken Quesadillas are incredibly easy to make, packed with savory barbecue chicken, melted cheese, and a hint of zesty flavor, making them the perfect quick lunch or comforting snack.


Ingredients

  • 1 cup cooked, shredded chicken (rotisserie works great)
  • 1/2 cup your favorite BBQ sauce
  • 4 large flour tortillas (about 10 inches)
  • 1 1/2 cups shredded Monterey Jack or Mexican blend cheese
  • 1/4 cup finely chopped red onion (optional, for zest)
  • 1 tablespoon butter or cooking spray

Instructions

  1. In a small bowl, toss the shredded chicken with the BBQ sauce until fully coated.
  2. Heat a large skillet or griddle over medium heat. Lightly butter one side of a tortilla or spray the skillet with cooking spray.
  3. Place one tortilla in the skillet. Sprinkle half of the cheese evenly over the tortilla, leaving a 1-inch border.
  4. Spoon half of the BBQ chicken mixture over the cheese. Sprinkle with red onion, if using.
  5. Top with the remaining cheese, then place a second tortilla directly on top.
  6. Cook for 3-4 minutes until the bottom tortilla is golden brown and the cheese has started to melt.
  7. Carefully flip the quesadilla using a large spatula. Cook for another 3-4 minutes until the second side is golden brown and the cheese is completely melted and gooey.
  8. Remove from the skillet, let rest for 1 minute, then slice into wedges. Repeat with the remaining ingredients.

Notes

  • Serve immediately with sour cream, salsa, or extra BBQ sauce for dipping.
  • For extra flavor, stir 1 teaspoon of chili powder into the BBQ chicken mixture.
  • If you don’t have pre-cooked chicken, quickly sauté 1 small chicken breast seasoned with salt and pepper, then shred.
