Ingredients

  • 1 pound fresh asparagus, trimmed
  • 2 tablespoons olive oil
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons lemon juice
  • 1 tablespoon red wine vinegar
  • 1 clove garlic, minced
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat your grill or oven to 400°F (200°C).
  2. Toss the asparagus with olive oil, salt, and pepper.
  3. Grill or roast the asparagus for 8-10 minutes, or until tender-crisp.
  4. In a small bowl, whisk together the lemon juice, red wine vinegar, and minced garlic. Season with salt and pepper.
  5. Arrange the asparagus on a serving platter.
  6. Drizzle with the lemon vinaigrette and sprinkle with Parmesan cheese.
  7. Serve immediately.

Notes

  • For a richer flavor, you can add a tablespoon of toasted pine nuts or slivered almonds.
  • If you don’t have a grill or oven, you can also blanch the asparagus in boiling water for 3-4 minutes, then immediately transfer to an ice bath to stop the cooking.
